Truth be told, I have been making pulled pork – slow cooker style – for about as long as I can remember. However, it wasn’t until recently that I learned a flavorful tip that I cannot wait to share with you!

I was flipping through Americaโ€™s Test Kitchenโ€™s Slow Cooker Revolution and saw their recipe for Beginner’s Pulled Pork and I was intrigued. The recipe called for cutting your pork roast into quarters before seasoning and placing in the slow cooker. I had one of those “why didn’t I think of that moments” and have totally been quartering my roasts ever since!

Now, America’s Test Kitchen’s recipe also calls for you to wrap your seasoned roast in plastic wrap and refrigerated overnight but I don’t always have time for that and while I am sure that would enhance the flavor, it turned out perfectly delicious without that step.

Freezer Friendly

This is one of those great recipes that makes a ton of meat that can be used for any number of things… sandwiches, tacos, casseroles, salads, etc. I like to take about half of my roast and freeze for later use. It is so nice to just be able to grab it out of the freezer and warm it up on a busy night.

Instructions

  • Quarter your pork butt roast into four even pieces and place in slow cooker
  • Mix your brown sugar, paprika, garlic powder, onion powder, ground cumin, cayenne pepper and 1/2 teaspoon of salt together in a bowl
  • Make small holes all over your roast pieces with a fork
  • Rub the seasoning mixture all over your roast quarters.
  • Pour your bbq sauce evenly over your roast
  • Cover and cook on low for 8 hours or on high for 5-6 hours, until your roast is tender
  • Place your roast in a bowl and using two forks, shred your roast into bite-size pieces or use electric mixer to shred and cover.
  • Leave the liquid in your crock pot for 5 minutes
  • Use a big slotted spoon to remove the fat from the top
  • Sprinkle liquid with salt, pepper, brown sugar and cider vinegar to taste
  • Pour one cup of liquid over shredded pork and toss until well coated (Add more liquid if the shredded pork becomes dry)
  • Serve with your favorite bbq sauce

 Slow Cooker Recommendation

We made this delicious pork in my 6 qt slow cooker. Most 5-6 qt slow cookers should work just fine with this recipe. Since the pork roast is quartered, it could likely fit in a smaller size slow cooker as well.

      I honestly just add it to taste. We probably added 1/4 cup to ours.
